Penne in Red Mushrooms Sauce (Xs’ own recipe)

Recipe for 4

500gr of penne pasta
4 large ripe tomatoes or 1 can of mashed tomato sauce
1 medium yellow onion thickly chopped
1.5 cups of washed and thickly sliced fresh mushrooms
1/3 cup water
2 tablespoons of fresh basil, chopped
1/3 cup red wine (preferably dry)
1/2 teaspoon salt
1/3 teaspoon freshly ground black pepper
3 tablespoons olive oil
1 teaspoon white sugar (or 1 sweetener)
Grated parmesan


In a medium saucepan, heat the olive oil, over medium heat. Add the onion and sauté until glossy. Add the mushrooms and stir to mix. Cook for 3 minutes and add the tomato sauce and the water.
Stir well and cover. Let simmer for 8 minutes, occasionally stirring and checking not to lose all the water. Add the red wine, reduce heat to low; cover and simmer to blend flavors, for about 10 minutes. Uncover and add the basil. Cook for 2 more minutes and remove from heat. Add immediately the sugar (or the sweetener) and stir well.
Meanwhile, prepare pasta according to package directions.
Serve the pasta in deep dishes and spread over them some sauce. Sprinkle some cheese on top and…….. ENJOY!
