Arugula (rocket) salad with tuna (House Recipe)

Recipe for 4

1 large bunch of fresh rocket
1 canned tuna (in water) 200gr
2 medium tomatoes, roughly chopped
1 carrot cut into thin strips (julienne)
1 tablespoon balsamic vinegar
1/2 tablespoon honey
2 tablespoons olive oil
1/2 teaspoon ginger, powdered

Wash thoroughly the rocket, chop the stalks and discard. Cut the leafs by hand into 2-3 parts and place them in a large salad bowl.
Add tomatoes, carrot and the tuna, which was drained previously. Mix all ingredients together and portion into 4 smaller bowls or dishes.
Using a shaker or electric mixer, mix the olive oil, vinegar, honey, ginger, salt and pepper. Drizzle with the dressing the salads. You can adjust the quantity of oil and vinegar according to your tastes. Serve with fresh crusty bread. Enjoy!
