3 cups thinly sliced (matchsticks shape) vegetables (carrots, cucumber, zucchini, bell peppers –any color, cabbage, celery, etc)
1 large onion-thinly sliced
2 tablespoons light soya sauce
1 tablespoon honey
Preparation:
Bring water and salt to boil. Add noodles and cook 'bite like'. If fresh just blanch and cook longer if dry.
Drain immediately and cool under running water till noodles are thoroughly cooled. Work 1 tbsp of the oil into the noodles and leave in the colander till required.
Heat rest of the oil preferably in a wok and stir- fry onions till are glossy (high heat). Start adding the vegetables you prepared, by adding first the harder ones. For example if you prepared all the above mentioned vegetables then you should start with the carrots and the celery and finish with the cucumber and the cabbage. Each time you add a vegetable into your wok you should stir it for 30sec to 1 minute before you add the next one. Season with some salt and pepper.
Add the Soya sauce and the honey in a glass and stir until they mix well. If your honey is too thick add some more soya sauce.
Add the cooked noodles in the wok and stir well to mix with the vegetables. As soon as they mix well add the mixed honey and soya sauce into the wok. Stir well 3-4 minutes until the sauce is all over the noodles. Do all this over high heat.
Serve hot. Enjoy and try to use chop sticks!
