Drunken Mushrooms (Mediterranean recipe)

Recipe for two
500gr mushrooms
1 large onion
1 cup red wine (preferably dry)
2 tablespoons olive oil
1 tablespoon oregano
½ cup parsley

In a saucepan lay the olive oil and let it heat very well. Dice the mushrooms and chop thickly the onion. First through the onion in the saucepan and stir it until it gets a glossy look. Add the mushrooms and continue stirring for 2-3 minutes. Continue by seasoning with salt, pepper and the oregano. Let it cook for 2-3 more minutes and occasionally stir it.
Add the wine and let it cook for 8-10 minutes, occasionally stirring it. As soon as the wine evaporates and a dark sauce is formed remove it from the fire.
Serve it in a deep plate and garnish with the fresh parsley. It is a good idea to serve your mushrooms in pita bread. Enjoy!
