Peach Limeade Granita

Recipe for 6

4 cups water
3 cups peach slices
1 1/3 cups sugar
6 mint leaves
1 cup fresh lime juice
3/4 cup rum
For serving:
Some peach slices
Some fresh mint sprigs


First combine water, peach slices, sugar and lime juice in a medium saucepan. Bring the mixture to a boil. Reduce the heat as soon as it starts to boil and simmer for 5 minutes. Set aside and let cool, discard the mint leaves.
When cooled place the peach mixture in a blender with the rum and process until smooth. Pour processed peach mixture into a large baking dish.
Freeze the mixture for 8 hours or until firm. Remove mixture from freezer and using a fork scrape entire mixture until fluffy.
Serve immediately in tall glasses garnished with peach slices and mint sprigs. Enjoy!
