Recipe for 4
Ingredients:
2 chicken breasts, deboned and cut into bite size cubes
1 red bell pepper, thickly cubed
1 yellow bell pepper, thickly chopped
1 small courgette, thickly sliced
1 red onion, quartered
2 large tomatoes, thickly cubed
4 tablespoons olive oil, devided
1 tablespoon dry oregano, devided
2 tablespoons fresh lemon juice
salt
freshly ground black pepper
Preparation:
Place in a bowl the vegetables (bell peppers, courgette, onion, tomatoes) and add 2 tablespoons olive oil, 1/2 teaspoon oregano, 2 teaspoons lemon juice. Season with salt and pepper and using a spoon stir the vegetables to coat with the olive oil.
In another bowl place the chicken, 2 tablespoons olive oil, 1/2 teaspoon oregano, and give it a stir to combine.
Thread onto skewers the chicken and the vegetables exchanging a piece of meat with a piece of a vegetable. Place the skewers onto a hot grill pan and cook over medium heat according to personal preference. While cooking season with extra salt and pepper.
Serve while still hot with pita bread and tahini sauce. Enjoy!
