Recipe for 4-6
1 whole chicken (about 2.5-3kg)
5-6 thin bacon strips, uncooked
1/2 cup butter (unsalted), frozen and cubbed
1 teaspoon dried thyme, crushed
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon paprika, powder
Combine in a small bowl thyme, salt, pepper and paprika. Rub with the mixture the outside of chicken and in cavity.
Place the chicken in a shallow roasting pan. Arrange bacon strips over the chicken (mainly on breast portion). Arrange over the bacon and chicken the butter and cover. Bake, at 200oC in preheated oven for 2 and half hours (it takes approx. 1 hour per kg).
During baking occasionally uncover, collect juices from the bottom of the pan and sprinkle the chicken with it. Then cover and continue cooking. Allow 20 minutes before cooking completion to uncover the pan. This will give a nice goldish color to your chicken.
Serve hot with mash potatoes and steamed vegetables. Enjoy!
