Recipe for 4
4 pork chops, thickly chopped
2 tablespoons olive oil
2 apples, peeled, cored, and sliced
3 tablespoons brown sugar
1/2 teaspoon ground cinnamon
3/4 cup apple juice
1/2 teaspoon salt
1/2 teaspoon ground black pepper
Preheat oven to 220oC.
Heat the olive oil in a large skillet. Sauté the pork chops on both sides in oil for 2-3 minutes each side.
Place the pork chops in a large baking dish so that they do not overlap and season them with salt and pepper.
In a small bowl, combine the brown sugar, cinnamon, apple juice, and apples. Give them a toss together. Pour the mixture over the chops.
Pour evenly over the chops. Cover and bake in the preheated oven for 30 to 40 minutes, until apples are soft and meat is cooked.
Serve the pork chops blanked with cooked apples and some rice on the side. Enjoy!
