Recipe for 4
500gr potatoes, shredded
2 tablespoons olive oil
2 tablespoons flour, all purpose
2 cups heavy cream
1 1/2 cups shredded Cheddar cheese, divided
1/4 cup sliced fresh green onions
1 teaspoon salt
1/3 teaspoon black pepper, poweder
1/2 teaspoon nutmeg, powder
Preheat oven to 180oC.
Warm over medium heat the olive oil in a frying pan. Place the shredded potato in the pan and sauté it for 2 minutes and add the onion. Continue stirring for one more minute and add salt, pepper, and nutmeg. Add the flour and stir to absorb the liquids from the pan. Remove the pan from heat and add immediately half of the cheese. Stir and let the cheese melt. While the potato mixture is still warm scoop the mixture into 4 individual ramekins (you may instead use one large baking dish for the whole quantity of the mixture).
Fill up to half of the ramekin with heavy cream (do not cover the potato mixture). Sprinkle over the potato mixture the rest of the cheese.
Bake until hot and bubbly, about 20 minutes.
Serve directly from the oven and Enjoy!
