New Year’s Eve Cake (Vasilopita)

Recipe for 8-10 people

1 cup vegetable oil
4 eggs
½ almonds washed and finely chopped
1 cup sugar
2 cups flour, all purpose
1 whole orange unpeeled, ripe and juicy
3 teaspoons baking powder


Chop the unpeeled orange and deseed it. Place it in an electric mixer Puree the orange and add the oil, eggs, sugar. Process the ingredients until combined. Add flour, almonts and baking powder and mix to combine until a soft dough is formed.
Grease and flour a round baking pan 20-25 cm. Place the mixture into the pan and bake in preheated oven (180oC) for 45-50 minutes.
After 30 minutes of baking, check with a knife the centre of the cake. When the knife comes out clean it means that the cake is ready.
When done remove from oven and let cool thoroughly. Remove from pan and place on serving platter. Sprinkle with icing sugar and decorate accordingly for the New Years Eve.
