Broccoli and Cheddar Potato Skins

Recipe for 4-6

6 potatoes, medium sized
2 cups cheddar cheese, grated
2 cups broccoli, chopped into bite size chunks
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/3 teaspoon grated nutmeg
2 tablespoons olive oil
Vegetable oil for frying
Sour cream (optional)


Wash thoroughly the potatoes and bake for jacket until done. Cut in half. Scrape out middle with spoon leaving some potato left on the skins.
Place in a large bowl the broccoli, olive oil, salt, pepper and nutmeg. Stir to coat the broccoli with the spices.
Stuff the potato skins with broccoli. Sprinkle the stuffed potato skins with cheese on top. Bake in preheated oven (210oC) until cheese melts.
Serve hot with sour cream on the side. Enjoy!
