Spetsofai (Greek Recipe)

Recipe for 3-4

1.5 cups spicy homemade sausage, chopped thickly
6 bell green peppers thickly chopped
3 large ripe tomatoes, grated
3 tablespoons olive oil
1 teaspoon oregano


Place the sausage in a skillet and sauté without oil. When the sausage is half done, remove from the skillet and leave it on the side.
Add the peppers and olive oil in same skillet and fry for a couple of minutes. Return the sausage in the skillet and add the tomatoes and oregano. Stir andsimmer for about 20-25 minutes, until sauce thickens. Season with salt only if it is needed (depends on the type of the sausage that you will be using).
Serve warm with fresh crusty bread. Enjoy!
