Baked Zucchini Frittata (Italian Recipe)

Recipe for 4

1 1/2 cups thickly shredded zucchini
5 large eggs, slightly beaten
1/2 cup fine bread crumbs
1/2 cup fresh milk
1/3 cup grated Parmesan cheese
2 tablespoons butter, melted
1 red bell pepper, deseeded and chopped
1/2 teaspoon salt
1/4 teaspoon black pepper, powdered
1/4 cup finely chopped onion

Preheat oven at 200oC.
In a large bowl, combine all ingredients (except butter) together.
Pour the melted butter in a round shallow baking dish and brush it to go everywhere.
Pour the egg mixture into the buttered baking dish. Bake for 25 to 30 minutes or until set. Remove from the oven and let it to cool for five minutes before cutting it to slices.
You may serve it as a main dish for lunch or brunch with some fresh salad. Enjoy!
