Colourful Summer Salad (Mediterranean Recipe)

Recipe for 4

1 bunch lettuce, roughly chopped (about 4 cups)
2 green onions, thickly chopped
1 tomato, cut into cubes
1 red bell pepper thickly chopped
1/2 cup corn (canned in water without sugar)
1 lemon juiced
1 tablespoon olive oil
3 slices of ham cut into small cubes
10-12 black olives (preferably pitted)
1/2 cup grated parmesan cheese
3 tablespoons mayonnaise
1 ttablespoon mustard
Salt and pepper
1 pita bread

Place the pita in a preheated and oven and cook in a very low temperature for 8-10 minutes until dried but not burnt. Remove from the oven and let it cool.
In a small bowl mix the lemon juice, mayonnaise, mustard, salt, pepper and olive oil.
In a large salad bowl place the lettuce, tomato, pepper, corn, ham, the olives, and parmesan. Toss the salad to mix and add the dressing. Toss again all ingredients together until the dressing combines well.
As soon as the pita is cooled down, break it into small pieces with your hands.
Serve the salad in individual bowls and just before serving, springle with some pieces of pita on the top. Enjoy!
