Golden-Fried Baby Squid- Calamari (Mediterranean Recipe)

1.5 kg whole baby squid
1 ½ cups tab water
2 cups Flour
1 teaspoon baking powder
½ teaspoon freshly grounded pepper
½ teaspoon salt
3 cups olive oil
½ cup fresh parsley (thinly chopped)

In a mixing bowl add the flour, baking powder, pepper, salt, and the tab water. Mix the ingredients and whisk until smooth. If you think is too thick add some more water. If too watery add some flour. As soon as you get the correct texture, heat the olive oil in a frying pan.
Place the calamari (3-4 at a time) in your mixture and from there directly in the frying pan. Deep fry until golden. Drain and serve garnished with wedges of lemon and sprinkled with the fresh parsley.Enjoy!
