500gr small fresh mushrooms
3 tablespoons olive oil
1/4 cup each balsamic vinegar
3 tablespoons lime juice
3 tablespoons brown sugar
2 large cloves garlic, minced
1/2 to 1 teaspoon hot red pepper flakes
1 cup broken by hand walnut pieces
In a small bowl, combine and mix the vinegar, the lime juice, sugar, garlic and red pepper flakes. Heat a large heavy skillet over medium heat. Add walnuts, cook and stir constantly for two to three minutes or until lightly toasted; remove and set aside.
In same skillet heat olive oil over medium-high heat, add mushrooms and stir-fry for three to four minutes. Add walnuts to skillet and stir in vinegar mixture while stirring constantly for two to three minutes or until sauce is bubbling and mushrooms are well coated.
Serve with steamed rice, or serve it as a side dish with meat dishes. Enjoy!
